    Is there a possiblity to run custom function when the payment status for a lead changes?

    You can use the gform_paypal_post_ipn hook http://www.gravityhelp.com/documentation/page/Gform_paypal_post_ipn to run code after a PayPal payment status is updated. However, you did not mention which payment add-on you're using.

    Sure, that will work so long as the Pronamic iDeal plugin updates the payment status in the entry.
