I'd like the user to be able to receive a confirmation email containing all of the information they sent to us, added in to the email automatically. Is this possible without individually adding every single field (our form is kind of long and doing it manually could get ugly)?

Yes, you can edit the User Notification in the Notifications area for that form and then in the Message select the "All submitted fields" from the "Insert form field" drop down. This will add the {all_fields} merge code to the Message body and will be replaced with a table containing all the submitted form field data automatically.
