is there a way to prevent duplicate choices between drop down options? in other words if I say choose 3 products out of the 3 drop down menus. Now each dropdown had 5 options.. how can I prevent them choosing option 1 on all 3 menus?

There is no built in way to do this. The only way it could be accomplished would be to write your own custom validation using the gform_validation hook. so it would require custom code to implement.
