We have a registration form that gives people two options... pay offline later or pay online with a credit card. We had someone select offline who now wants to put it through an online payment. If I go into "entries" and click "edit" and enter the credit card information, does it send that for processing or does it just store the information in the database?

It would just save that in the database. You would probably want to create an invoice through Paypal and then edit the entry details.
