There is no concept of inventory or slots being used, so I don't know of a way to do this natively in Gravity Forms. There is this snippet http://gravitywiz.com/2012/09/19/better-inventory-with-gravity-forms/ but that is designed to control the number of times a single item can be used (purchased.)

I have not seen anyone do anything like that.
I have seen a snippet where you could use checkboxes or radio buttons for time slots, then once a time slot is selected and the form is submitted, that option is no longer available when the form loads again. That was not created by Gravity Forms though. Would that be something you are interested in, using radio buttons rather than a drop down?
