Are you using a SMTP plugin that might be hijacking your Notification settings?
No I'm not, I'm with WP Engine hosting if that is relevant.
I'm not sure. We can't be experts in hosting environments unfortunately. Have you put in a ticket with them? Could you see about working through our Troubleshooting steps and see if it helps isolate the issue? http://www.gravityhelp.com/documentation/page/Troubleshooting_Notifications

I am having similar issue. The reply email is set to my admin email instead of the person who submitted the form.
I have tried all 3 suggested plugins above and it still doesn't work.
How can you debug whether the issues is with Gravity forms or hosting provider?

I have also received an email for Dreamhost and they confirmed that everything is setup correctly from their end.
What should be the next step after installing the Logging Add-On? Need to fix this for my client quite urgently. Thanks for your help.
