I'm not sure if this is recent, but appears that when forms are sent to Salesforce, quotations and ampersands are converted to HTML.
I assume Salesforce is doing this on their end but wondering if there is a way to avoid this.

If you're talking about the SalesForce add-on, that's something that was developed by a third party developer. We don't maintain that or provide support for that here. You'll need to report any problems with that the the plugin author.
