This does not appear to be possible using the Freshbooks API, so our add-on won't be able to do it either.

Actually a WooThemes extension offers this capability: http://www.woothemes.com/extension/freshbooks-integration/
So it would be theoretically possible for the Gravity Forms extension to offer the same.
I will ask the developers about that. Thanks for the information. I don't believe it's possible now, but the APIs are changing all the time and we update our add-ons when we can to add new functionality.

We currently don't support that feature, and unfortunately we don't have any hooks that will allow you to map that manually. I will talk to the team and see what we can do about adding that to the next version of the Add-On
