I would like my visitors to be able to sort 10 items in order of importance before they submit the results to me. Is that possible with Gravity Forms?

That isn't currently possible, there isn't a field type that would do what you are describing. The only thing you could do is improvise using drop downs for each item for them to select 1-20 to rate it. We are planning on introducing fields for Rating/Surveys in the future, and a field to have them sort the items in the order for importance would be a cool one. We'll add it to our feature idea list.
