Gravity Forms does not add visible/editable fields to the User Profile page. It strictly captures and creates data, it is not designed to add functionality to the user profile itself. So it does not add custom meta fields to the users profile.
The custom meta fields are for advanced usage for users who know how to add custom meta fields to the user profile page (either via custom code or another plugin). This is one of the reasons the User Registration Add-On is a Developer Add-On rather than included with the other licenses.
Same goes with creating Posts with Gravity Forms. If your theme doesn't display the custom field, it's not going to be displayed. However, there is content template functionality on the Post Body field that allows you to insert the value of any field into your post body content.
