My goal here is to produce a post to the blog that is just an image through a submit form. I have the form basically working so far however, I want the submission to produce a blank title (not "Untitled_X). Help on how exactly to achieve this?

Create a post without a title at all

Wordpress requires a Post title, so you won't be able to create a post without a title. What you need to do is change your template files so that the title is not displayed.
