Customising the email notifications

I have set up a long form with different sections but which have the same field names.

Is it possible to customise the notification email so that the backgrounds for the field titles in each section are a different color to differentiate the sections?

Sure, you would have to do this by creating your own notification by using the merge tag drop down instead of the all_fields merge tag and then create your own HTML and styling. The all_fields merge tag and it's formatting is what it is.
