If Gravity Forms form builder isn't working with those plugins active then the problem is those plugins are outputting code on the Gravity Forms admin page that is interfering with the form builder Javascript.

Those plugins should NOT be outputting code on the Gravity Forms admin pages. That is poor plugin development if they are. There isn't anything we can do on our end to combat that. If another plugin is outputting code where it should not, it can cause problems and that is what is happening.

You would have to contact the developer of the plugins that are causing the problem and let them know what the plugins are doing and request they update their plugins to only output code when necessary.
