Are there any way I can set up a form that uses the PayPal option "Paymentaction", so the transaction ouccurs but the amount will not be withdrawn from the buyers account before I say so?

Some things are only possible by the addition of code to extend Gravity Forms functionality. If you're not comfortable with the customization, you might consider posting a job or getting some help with your project. This is first and only time paymentaction was mentioned here, so this is not something the Gravity Forms can do for you by default, but it is possible to accomplish by using the filters that are built in to Gravity Forms.
