Is there any way to set the form so pressing Enter does not submit (making the users use their mouse to click submit button).? I've got novice users who are pressing enter to go from one field to the next instead of tab and prematurely submitting their entry.

There is no setting, that's simply a default browser behavior for forms. You would have to add some javascript to your page template/theme to disable the enter key. Something like this..
