User Experience question

  1. This is general question for Gravity form community & admins.

I have 2 important forms on my website which help my visitors to submit request for free quotes. Each have 7 - 8 fields. They stay same all the time.

With respect to good user experience which of below 2 approach is better :
1 ) show complete form on page load
    2) show one field at a time & display next field as user starts filling the form

Showing the entire form, especially if it is short, allows the setting of expectations. People may get frustrated having new fields shown to them through the process of filling things out. This isn't from any substantiated data though.
